Chef/Owner Neil Annis

Chef/owner Neil Annis is well renowned for his simple, yet sophisticated creations. A Culinary Institute of America graduate voted "most likely to succeed," he has worked with some of the brightest stars in the culinary world and in some of the country's most notable restaurants, including the famed Four-Star Bouley in New York City, the Occidental, in Washington, D.C., and Aux Beaux Champs in the Four Seasons Hotel, in Washington, D.C. He also completed "stages" at restaurant Alain Ducasse in the Plaza Athenee Hotel, Paris, and restaurant Kandinsky in the Steigenberger Kurhaus Hotel, Hague, Netherlands.

Annis served as Chef de Partie Saucier with Christian Delouvrier at Les Célébrités in the Essex House, Hotel Nikko, in New York City before being recruited as Corporate Chef of Research and Development for Unilever Corporation, where he developed recipes for hundreds of branded consumer products.

After extensive travel throughout the United States and Europe, Annis reunited with Delouvrier as Chef de Cuisine to re-open Lespinasse, one of the top-rated restaurants in the world, located in New York's famous St. Regis Hotel, where they earned the coveted Four-Star rating.

Annis then opened Compass on New York's Upper West Side as Executive Chef and led the restaurant to critical acclaim, being voted by Zagat Guide as "Best New Restaurant in New York City" in 2003.

In October 2004, Annis became Chef/Owner of Sidney in East Berlin, Pennsylvania.
